Big Cakes

Cake.  Cake cake cake cake cake.  Cake cake cake…

Does this page really need any more introduction (asks she who has been re-indexing her entire blog for the last 24 hours and is getting increasingly restive, and also wants cake)?

Perhaps it does.

The cakes on this page range from spectacular special-occasion cakes which take half the day to make down to the good old ‘bung it all in a bowl and mix it up’ method which takes ten minutes to put together and then all you have to do is wait for it to finish baking.  So please don’t be intimidated by the lemon meringue monstrosity, which is wonderful, but really does take all day and a lot of patience and luck (possibly less luck would be required if I were less lazy and more inclined to follow a recipe, but there you have it) – there are plenty of good, straightforward, afternoon-tea sort of cakes on this list, as well as several cakes which give you excellent results for hardly any work at all.  And those are the kind I make most often.  Enjoy!

      The eggplant cake isn’t one of my recipes, so I can’t post it here. It can be found in Harry Eastwood’s book, Red Velvet, Chocolate Heartache, which I thoroughly recommend.
