In which I am wildly excited…

I’ve just been asked to cater finger food for a wedding!

I have no idea whether I can do this or not (and yes, I have told the bride this – further study is definitely required), but it’s very exciting to be asked…

Apparently, there are dietary requirements involved.  It seems my brain has absolutely no trouble coming up with ideas for a vegan feast, but I’m a bit scared we’re actually talking gluten-free, which is much harder…

On the bright side, I get to make wedding cupcakes of diverse kinds, and I know I can do that…

*goes off to plot, on the basis of actually not that much information so far.  Is 10pm on a Saturday night too late to call the bride-to be?  Even if I am excited?  Especially if I am excited??*

  1. Talking about vegan reminded me – any vegan substitute for whipped egg whites? It’s a coconut cookie recipe that calls for flour, butter, sour cream, and very whipped egg whites – I know substitutes exist for the first two.

      I’m not sure if there is a good replacement for whipped egg-whites. The people I would ask would be the girls at the Post Punk Kitchen (http://www.theppk.com) – they are the ones who wrote the vegan cupcake and cookie books that I really love.

      You might get somewhere with agar powder dissolved in water and whipped – I was trying this sort of thing for my marshmallow, and it does whip up a bit, though not well enough for my purposes. An eggwhite weighs about 30g, so I’d use a US tablespoon each of agar and water.

  2. Some Australian Supermarkets have/had a product called “vegan eggwhites” in the freezer section. I never got around to trying them, despite being allergic to egg whites. The need was never strong enough.

  3. 10pm is never too late to call the bride to be. Especially if you’re excited 🙂 SO AM I!!!
