~ Egg-Free ~

These recipes are all either naturally egg-free or can be easily made so, and have instructions on how to manage it.  But you don’t have to limit yourself to these recipes if you can’t eat eggs for whatever reason – there are all sorts of things you can use as substitutes, some of which appear in the recipes below.

In general, when substituting eggs, you need to be aware of two things: the function of the egg in the recipe, and its weight / volume.  The average egg is about 60g and 1/3 of a cup, so you need to make sure whatever you use as a substitute provides about that much in the way of volume, or use a fatty liquid like milk or soy milk to make up the difference.

In terms of the egg’s function, it needs to do several things at once: bind a recipe (making it stick together), leaven a recipe (making it rise) and provide the recipe with the fat that keeps it moist (sorry, but if you want a moist cake, it does need to have fat in it one way or another).  Bicarb of soda or baking powder are good substitutes for the leavening property, and things like mashed banana, apple sauce, vegetable oils and coconut milk can all help with binding and providing fat.  You can also use flaxseed and water to make an egg substitute, but you’re better off getting information on this from a vegan blog, because I’ve never tried it.  Do be aware that you can only get so far with egg substitutes – a 20cm cake that requires three or more eggs, or any recipe involving a lot of egg-whites, is probably not going to work without actual eggs.
