~ Dairy-Free ~

These recipes are all either completely dairy-free or easily rendered so (ie, by omitting grated cheese or cream garnishes).  There are a few which are a little trickier, but all have extensive discussions in the Variations section of the recipe on what to substitute for dairy products and how to go about doing so.  There’s a lot you can do not just with soy-based products but with coconut and nut milks and butters – if you haven’t tried playing with some of these, now is definitely the time to explore!
